Eruption Brut
Inside this bottle of Eruption Brut from the 2021 vintage are grapes from no fewer than nine winegrowers. At first, that might sound like a compromise. In fact, the exact opposite is true. Anyone who sets out to make sparkling wine has Champagne in mind – and that is, as we all know, the crowning glory of the wine world.
Traditional bottle fermentation and grapes sourced exclusively from the finest sites: these are the conditions under which this cuvée of Pinot Blanc, Chardonnay and Pinot Noir is created.
The vines grow on shell limestone and basalt. The grapes are harvested by hand, gently pressed and spontaneously fermented in large wooden casks. The yield after pressing is a mere 50%. Less than 3 g/l of residual sugar and 18 months (reserve) on the lees are the other key data. They are a big promise – and we deliver.
A fine mousse, a taut structure and aromas of ripe pear, fresh brioche and quince make this Brut the flagship of this growers’ association. It is the embodiment of the passion of remarkable people and the expression of first-class craftsmanship. Pressure creates diamonds – or, in our case, bubbles.
